Founded in 2021 by winemaker Apostolos Mountrichas, the winery is the culmination of a journey that began in the early 2000s. Mountrichas discovered his passion for Santorini’s remarkable landscapes and the robust character of Assyrtiko, leading him to embark on a dedicated project in 2012.

With a philosophy rooted in innovation and tradition, Anhydrous Winery focuses on the ancient techniques that enhance the purity and primary varietal characteristics of its wines.
