 A seasoned sommelier with a flair for both wine and sake, Michele brings global insight and a refined palate to one of London’s most dynamic hospitality groups.

As Head of Wine & Sake at Thesleff Group, Michele Orbolato curates distinctive beverage programs that marry traditional craftsmanship with modern dining trends. Known for his ability to select wines and sakes that elevate a guest’s dining experience, Michele’s role spans sourcing exceptional vintages, championing lesser-known regions, and ensuring every selection reflects quality, authenticity, and story.

The Thesleff Group is synonymous with high-end hospitality, operating venues that blend cosmopolitan style with world-class food and drink. Michele’s leadership ensures the wine and sake lists at these venues capture both timeless appeal and forward-thinking creativity — delighting London’s eclectic and discerning clientele.

With years of experience across fine dining and luxury beverage service, Michele’s career began almost serendipitously, sparked by a visit to Vinitaly that ignited his passion for wine. Today, he is equally at home discussing a grand cru Burgundy, an artisanal sake, or a rising-star Greek wine region.

Who or what inspired your journey into wine?

 It all started quite by chance. I visited Vinitaly with a friend who worked in the trade, and I was hooked from the first glass.

Your favourite UK restaurant to enjoy wine (outside of your workplace)?

Noble Rot — their list is always exciting, thoughtfully curated, and the atmosphere is just perfect for enjoying a great bottle.

A wine region you think is underrated?

Recently, I was amazed by Meteora in Greece. It’s stunning in both scenery and the wines produced there.

The PGI Meteora (ΠΓΕ Μετέωρα) zone, established in 2006, lies in the district of Trikala in northwestern Thessaly, at the heart of Greece. Vineyards stretch from 150 to 800 meters in altitude across Vasiliki, Kalambaka, Parallithea, Tymphea, and Hasia. Kalambaka — especially the village of Kastraki, famed for its red wines — sits beneath the breathtaking Meteora rock formations and boasts a long winemaking tradition.

After a period of decline, viticulture in Meteora has seen a revival, producing a diverse range of wines: whites, rosés, reds, and sparkling styles in dry, semi-dry, semi-sweet, and sweet expressions. Native varieties such as Assyrtiko, Malagousia, and Zalovitiko thrive alongside international grapes like Chardonnay, creating wines that combine freshness, character, and a deep sense of place.

A wine trend you’re excited about for 2026?

The growing focus on low- and zero-alcohol wines without compromising on quality.

One piece of advice you’d give to wineries entering the London Wine Competition?

Stay true to your terroir — showcase what makes your wines unique.
