Great wine is often described as being made in the vineyard.

At Cael's Gate Wines, that idea is less a philosophy than a daily practice.

Founded in 2016 by brothers Chris and Sam Chew together with Reyna Chew, the family-owned winery was established with a clear objective: to create wines that stand out not through scale, but through meticulous attention to fruit quality and every decision that follows. As passionate wine enthusiasts, the founders asked themselves a simple question that continues to guide the winery today: What distinguishes a great wine from a good one? That search for the answer became the foundation of Cael's Gate Wines.

Chris Chew, the winery's principal winemaker, believed the answer began in the vineyard.

Rather than owning extensive vineyards across multiple regions, Cael's Gate partners with respected growers throughout New South Wales, selecting vineyards known for producing outstanding fruit. The winery focuses on cultivating low-yielding vines and harvesting grapes only when they have reached optimum ripeness and physiological maturity. By encouraging vines to concentrate their energy into fewer grape clusters, the resulting fruit develops greater flavour intensity, balance, and complexity.

That commitment to fruit quality extends throughout the winemaking process.

The grapes are handpicked, carefully sorted, crushed in small batches, gently basket pressed, and matured with the aim of preserving varietal expression and structure. Every stage is designed to protect the integrity of the fruit rather than overpower it, allowing each wine to express both its variety and its place of origin.

Although based in the picturesque Broke Fordwich district of the Hunter Valley, Cael's Gate draws upon the diversity of New South Wales' wine regions.

Long-standing relationships with growers in the Hunter Valley, Mudgee, and Riverina enable the winery to source fruit from vineyards that excel with different varieties and growing conditions. The Hunter contributes its internationally recognised Semillon and elegant Shiraz, shaped by volcanic soils and a warm maritime climate. Mudgee's warm days and cool nights produce richly flavoured Shiraz and Cabernet Sauvignon, while the Riverina provides deeply coloured fruit from mature vineyards, including heirloom vines planted during the 1960s that have never been treated with herbicides or pesticides. Together, these regions allow Cael's Gate to produce wines that combine regional character with a consistent house style centred on richness, balance, and purity of fruit.

The winery's portfolio reflects that philosophy.

Rather than pursuing an extensive range, Cael's Gate has concentrated on classic Australian varieties, including Shiraz and Cabernet Sauvignon. Each wine is produced with an emphasis on structure, varietal definition, and ageing potential, qualities the family believes begin with exceptional raw materials rather than extensive intervention in the cellar. As the winery states, "To craft full and flavoursome wines, we meticulously select only the finest grapes."

That disciplined approach has earned recognition beyond Australia.

At the 2025 London Wine Competition, Cael's Gate's Petra Stella Shiraz 2023 received a Silver Medal with 94 points. Judges described a wine displaying aromas of ripe black fruits, herbs, and oak spice, followed by a rich palate layered with mint, soft sweetness, and a long, warming finish. The London Wine Competition evaluates wines not only for quality but also for value and packaging, recognising products with genuine commercial appeal for today's international buyers.

Recognition from respected critics has further reinforced the winery's growing reputation.

James Halliday's Australian Wine Companion has described Cael's Gate as "an outstanding winery capable of producing wines of very high quality," a reflection of the consistency the family has sought since the winery's founding.

Yet perhaps the most distinctive aspect of Cael's Gate is its refusal to rush the process.

The winery repeatedly returns to the importance of patience, whether allowing vines to produce naturally lower yields, waiting for ideal ripeness before harvest, or handling fruit gently through small-batch production. Rather than pursuing higher volumes, the family has focused on producing wines that faithfully express the vineyards from which they originate.

That philosophy also shapes the visitor experience.

Located on Wollombi Road in Broke Fordwich, the cellar door combines contemporary design with the relaxed atmosphere for which the Hunter Valley has become known. Surrounded by vineyard views, it offers visitors an opportunity to experience wines sourced from several of New South Wales' finest growing regions while gaining a deeper understanding of the meticulous approach behind each bottle.

In many ways, Cael's Gate represents a broader shift taking place within Australian wine.

Increasingly, producers are demonstrating that success is not determined by the size of a vineyard or the breadth of a portfolio, but by thoughtful vineyard partnerships, careful fruit selection, and a willingness to prioritise quality over quantity.

For the Chew family, that journey began with a single question about what makes a wine truly great.

Less than a decade later, the answer can be found in every bottle that bears the Cael's Gate name: exceptional wine begins with exceptional fruit, nurtured patiently, handled carefully, and allowed to speak for itself.
