Owners America and Nick Brewer share their journey of crafting authentic, terroir-driven wines that are reshaping perceptions of English viticulture

Nestled in the heart of the English countryside, Oastbrook Vineyards is more than just a winery—it’s a product of owners America and Nick Brewer’s passion and dedication. A story that begins in Bahia, Brazil—America Brewer’s nativity—and winds through years of exploration, learning, and risk-taking, Oastbrook embodies the spirit of innovation and authenticity. At the core of this boutique winery is a commitment to crafting wines that reflect their unique terroir while embracing regenerative farming practices.

In this exclusive interview, America and Nick Brewer share insights into their journey, the art of winemaking, and the challenges and joys of running an award-winning vineyard.

Could you share a bit about your background and how your journey into winemaking began?

America & Nick: Our journey started long before we planted our first vines in 2018. America’s fascination with wine began in Brazil, inspired by an ancient vine that grew in front of her childhood home. Every year, her family would make wine from those grapes, planting the seed for a lifelong passion. Nick’s love for wine took root in Beaune, France, while he worked at Pickwicks for Alex Dale. Later, we both studied winemaking at Plumpton College, which gave us the technical foundation to bring our dream of Oastbrook to life.

Your personal involvement in vineyard tours and tastings seems integral to the Oastbrook experience. How does this hands-on approach shape your brand and the perception of English wines?

America & Nick: We believe in creating authentic connections. During our travels, the most memorable wine experiences were those with a compelling backstory that connected us to the people and the land. At Oastbrook, we aim to replicate that for our visitors. Sharing our journey and personally guiding guests through our vineyard makes the wine more meaningful to them. It also helps highlight the evolving reputation of English wines as truly world-class.

Could you tell us about a memorable moment or turning point in your winemaking career?

America & Nick: The real turning point came when we stopped following rigid winemaking rules and started trusting the grapes and our instincts. Initially, we were taught to avoid risks, but allowing the grapes to dictate the process led us to our low-intervention style. It’s a journey of discovery that’s helped us create wines that truly express our terroir and vintage.

Is there a wine region or style that particularly inspires you?

America & Nick: One word—Burgundy!

What are the essential skills for a successful winemaker?

America & Nick: Technical expertise is critical—you must understand the chemistry of winemaking inside out. But creativity and a willingness to take risks are what set great winemakers apart.

What brings you the most joy in winemaking, and what proves the most challenging?

America & Nick: The joy lies in transformation—watching the grapes you’ve nurtured evolve into wine, and seeing someone’s face light up as they enjoy it. The biggest challenge is balancing the unpredictable whims of nature with the many hats we wear, from managing the vineyard to hospitality.

How do you balance tradition with innovation in your winemaking?

America & Nick: Winemaking in places like Burgundy has evolved over centuries of experimentation—working out what works for the climate and terroir. Traditions exist for a reason—they work. But those traditions were born from past innovations. We honour them while using modern tools and a well-equipped lab to enhance our practices. Understanding the "why" behind traditional methods allows us to innovate with purpose.

What’s one lesson you wish you’d known when starting out?

America & Nick: Everything takes twice as long and costs twice as much as you think it will!

How do sustainability and environmental challenges impact your approach?

America & Nick: Sustainability is woven into everything we do. From day one, we’ve practiced regenerative agriculture, used green power, and recycled all our waste. It’s not just about environmental responsibility; it’s about ensuring the land remains viable for future generations.

What advice would you give to new winemakers?

America & Nick: Find a mentor and make small batches of wine that you fully own—it’s the best way to learn.

What are you currently exploring in wine, and why?

America & Nick: We’re diving deeper into premium still wines, particularly barrel-aged Chardonnay and Pinot Noir. Our Chardonnay Reserve 2022 marks the beginning of this focus, and we’re excited about its potential.
