Shashi Prakash is the Food and Beverage Manager at Taymouth Castle Golf and Sport Club. Born and raised in Jamshedpur, India, his passion for hospitality began at an early age. After earning a BA in International Hospitality Management from Queen Margaret University, he has spent over 14 years building his career across resorts and Michelin-starred establishments in the UK.
Hospitality is more than a profession to Shashi—it is a genuine passion. Beverages, especially wine, are his comfort zone and a space of constant learning and discovery.
My journey into wine began at a Michelin-starred restaurant in Edinburgh, where every Saturday, after the busy service, a sommelier would give us different wines to taste. I was instantly captivated—each glass told a unique story, every sip revealed new flavours, and I was amazed by the incredible diversity of wines.
That sense of discovery sparked a curiosity I couldn’t ignore. I started studying wine formally, completing several qualifications and participating in competitions that challenged me to refine my palate and deepen my understanding. Over time, wine became more than a skill—it became a passion, a way to connect with people, and a lens through which I could appreciate culture, craftsmanship, and creativity.
Today, as Food and Beverage Manager, that fascination continues to inspire me, shaping how I approach service, storytelling, and creating memorable experiences for every guest.

One underrated wine region I’m excited about is Elgin in South Africa. Known for its cool climate and high-altitude vineyards, Elgin produces some of the country’s most elegant Chardonnays and Sauvignon Blancs, with crisp acidity, vibrant aromatics, and exceptional balance.
The region’s unique terroir allows winemakers to craft refined, expressive wines that are often overlooked internationally. For me, Elgin represents a combination of precision, freshness, and creativity, making it a region full of potential and wines that pair beautifully with food—a true hidden gem in South Africa’s wine landscape.
One of my personal favourite producers is Pieter Walser, whose wines each tell a different story, reflecting both the character of the vineyard and the artistry of the winemaker. His work perfectly captures the spirit and versatility of Elgin wines.
One wine trend I’m excited about for 2026 is the rise of non-alcoholic and low-alcohol wines. As more consumers seek mindful and healthier drinking options, winemakers are creating non-alcoholic wines that retain complexity, flavour, and elegance.
I find this exciting because it allows everyone to enjoy the wine experience—pairing with food, sharing stories, and exploring terroir—without compromise. It’s a space full of innovation, creativity, and opportunity, and I’m eager to see how these offerings evolve and become a mainstream part of wine culture.
The London Wine Competition stands out for its credibility, transparent judging, and valuable feedback. Beyond awarding medals, it provides wineries with international recognition and exposure to key trade professionals, including importers, distributors, and sommeliers.
The competition not only highlights quality but also offers insight into how wines are perceived in a global context, helping producers refine and grow their portfolio. For any winery looking to showcase excellence and expand its reach, the London Wine Competition is an indispensable platform.

My advice to wineries entering the London Wine Competition would be to submit wines that truly represent their style and story. Focus on quality over quantity, ensure the wines are in peak condition, and provide clear tasting notes or context for the judges.
The competition is not just about winning medals—it’s an opportunity to showcase your brand, gain constructive feedback, and connect with a global audience of trade professionals. Authenticity and consistency always stand out.
