To make great wine, you need a great winemaker. But how was Elias Jreissati able to persuade one of Australia’s best, the renowned Paul Bridgeman. Paul is a traditional winemaker of the old school, overseeing every stage of production, including the nurturing of the vines.
The grapes are batch fermented, during which time Paul employs a slow, gentle and controlled extraction by hand plunging, allowing him to get a genuine ‘feel’ for the progress of the wine.
And finally the wine is matured – of course – in the finest French oak. The result is a selection of highly sophisticated and elegant wines that draw inspiration from the very best French wines. They are winning major awards at Australia’s pre-eminent wine shows while earning the praise of leading wine critics, including Jeremy Oliver, Huon Hooke and James Halliday.
