Colletti’s journey into the world of wine is rooted in his rich upbringing. Born in Naples and raised in the picturesque valley of Casentino in Tuscany, he was surrounded by natural beauty, culinary delights, and a deep cultural heritage. The influence of this environment laid the foundation for his love affair with wine—a passion that would shape his career in profound ways.
When asked about his inspiration to become a sommelier, Colletti speaks of a profound connection between culture, history, food, and the final product. For him, wine is not merely a beverage but a living expression of terroir, craftsmanship, and identity. The intricate interplay of geography, geology, and human expertise captured his imagination early on, fueling his desire to delve deeper into the world of oenology.
His move to London marked a pivotal moment in his career, exposing him to a vibrant culinary scene and providing opportunities to collaborate with top professionals in the industry. After over a decade in the wine industry, I had the pleasure to working alongside acclaimed professionals and chefs such as Eric Frechon, Pierre Gagnaire, Nobu and many others. The discovery of new ingredients, cuisine and clientele allowed him to run wine programs for fine dining and luxury properties.
